Dolium, the first totally underground Argentine winery, was designed to reconcile ancient traditions with the most modern technology and produce high quality wines.
Dolium is the Latin name of the wine amphorae in which the Romans were the first to preserve their best wines underground, in optimal temperature conditions.
Dolium was born with the highest quality concept incorporated. Its wines respond to an international profile while maintaining the personality of its native terroir. It is a commitment to the consumer and to themselves.
Its winemakers Sebastián Yañez and Laura Olguin, maintain the style of wines that evoke the intense fruits and the complexity of the Californian style promoted by Paul Hobbs, Andrea Marchiori and Luis Barraud during the period 2000-2005, biased in recent years in part by the growing demands for quality, intensity and fidelity to the vines, but without neglecting the style of each terroir and the search for its maximum expression. For this, they make separate small batches of wines with the grapes corresponding to each group of rows of vineyards in each vineyard, which allows them to detect the potential of each sector and work it to measure for the next harvest.
MoreNothing has been neglected. Following the precept "wine is born in the vineyard", they have devoted special attention to the selection of grapes grown in the best areas of Mendoza (Agrelo, Chacras de Coria, Lunlunta and Perdriel in Luján de Cuyo).
They carefully and manually harvest the grapes when it is at its best ripening moment. The grinding and fermentation takes place in its modern cellar equipped with facilities that use the best technologies available today.
The delicate treatment of the fruit ensures the aromas of the grape in its wines. After a prolonged maceration and fermentation at a controlled temperature, its young wines begin to mature in barrels of the best French and American oaks, which support the fruity flavor and aroma, thus reaching the wine its maximum expression and complexity.
