About Mendel

From the 80-year-old vineyards, very balanced and with low yield, the best batches are selected, achieving a significant concentration in the grape. Every detail of winemaking is rigorously respected, from the choice of plots with the appropriate maturity and the harvesting of the grapes in 18-kilogram trays, through the manual selection of grains and clusters and fermentation in small homogenized tanks with manual pieage. The skins are submerged in the liquid very gently, ensuring an important but selective extraction of aromas, tannins and polyphenols. All these elements will give volume, body and structure of the highest quality. Finally, its aging is produced in the best French oak, to give rise to the corresponding assemblage or blend. After several months in the bottle, the wine will be ready to uncork and be enjoyed.
