Description

The Latin word "dolium" means amphora, the distinctive bottles that the Greek and Roman classics used to store wine. Like the Romans, who kept wines underground at a constant temperature throughout the year, Dolium is the first underground winery in Argentina to combine such ancient traditions with modern technology. The winery's vineyards are located in Lunlunta, Agrelo, Perdriel and Chacras de Coria. All grapes are hand-picked and carefully selected from vines that have been pruned to reduce yields and increase the level of extract.

About Dolium

Nothing has been neglected. Following the precept "wine is born in the vineyard", they have devoted special attention to the selection of grapes grown in the best areas of Mendoza (Agrelo, Chacras de Coria, Lunlunta and Perdriel in Luján de Cuyo).

They carefully and manually harvest the grapes when it is at its best ripening moment. The grinding and fermentation takes place in its modern cellar equipped with facilities that use the best technologies available today.

The delicate treatment of the fruit ensures the aromas of the grape in its wines. After a prolonged maceration and fermentation at a controlled temperature, its young wines begin to mature in barrels of the best French and American oaks, which support the fruity flavor and aroma, thus reaching the wine its maximum expression and complexity.
