The Chardonnay, the main component in the cut, gives the fruit profile we are looking for with tropical notes, mainly fresh pineapple, and provides a large mouthfeel, as part of it goes through careful aging in barrels during which they are put into suspension. its lees. This strain blends perfectly with Pinot Gris, which adds complexity, with notes of white peach and a support of minerality such as graphite, which makes it even more interesting. With Sauvignon Blanc we seek to increase freshness and provide a subtle herbaceous character, in which notes of fresh grass predominate. The sum of the 3 strains and their proportions makes the cut present a perfect harmony between the fruit, minerality, oak aging and acidity.

About Domaine Bousquet

The organic philosophy of Domaine Bousquet seeks to preserve the quality of the grapes, which is why careful handling is the principle that governs all the activities of the winery.

The Domaine Bousquet team is attentive to small details and specializes in combining traditional and avant-garde methods, with the aim of producing high-quality wines with a modern style.

The winery has a capacity of 4.5 million liters of quality wine in stainless steel tanks, concrete and French and American oak barrels.

The grapes arrive at the winery in small bins to the reception area where they are manually selected before going through the destemmer. After destemming, the fruit is sent to the maceration and fermentation tanks for approximately 30 days. Fermentation is carried out with selected yeasts at a controlled temperature. During the vinification process, our oenological team regularly controls and supervises our wines to ensure exceptional quality in each of our lines.
