The Cabernet Sauvignon comes from Lot 3 of the La Pirámide Vineyard. These vines were planted in 1983 and provide an exceptional level of balance and homogeneity. The grapes in this batch have an intense cassis flavor and excellent structure. The second component of the Cabernet Sauvignon was obtained from batch 2 of the Domingo vineyard. This higher altitude and vineyards with cooler climates give aromas of ripe black cherries, with a slight mineral touch and notes of oregano and thyme.

DV Catena Cabernet Sauvignon, has an intense ruby ​​red color with dark purple reflections. The nose offers complex aromas, reminiscent of cassis, raspberries, interwoven with sweet spices such as black pepper and cloves, cedar and leather, with mineral notes of graphite. Intense and full-bodied, this wine of remarkable elegance, presents a smooth texture and excellent balance. Its acidity and soft tannins give it a well-defined structure, crowned by a long and persistent finish.

Description

The elaboration of wines by means of cuts of different varietals, batches and vintages is an art as old as that of oenology itself. For many years, Nicolás Catena Zapata and his team have planted an enormous number of varietals, including different clones, in various microclimates of the mountain.

The variation of types of soil, temperature and thermal amplitude that exist in each altitude, originate an endless number of unique microclimates. Over the years, these investigations have led to determine that the same varietal, and even the same clone, presents a totally different aromatic and flavor profile, depending on the microclimate in which it is grown.

The identification and assessment of these differences, sometimes very subtle and others of great forcefulness, have allowed the development of wines, which together have a much more complex, creative and intense expression than if each of their components were evaluated separately.
