Canopus is the project of Gabriel Dvoskin, who worked as a journalist in Europe, fell in love with wine and got involved in Burgundy working with pruning and cultural tasks in the vineyard. Determined to start his own path, he acquired thirteen hectares in El Cepillo and already has ten of them planted with Malbec and Pinot Noir, which is characterized by its cold climate and heterogeneous soils, following biodynamic practices.
They don't use recipes or makeup. They remain with the conviction, the meticulous work and, above all, the patience to integrate the subtleties of the vineyard and reach the maximum purity in the grapes and the environment.
“The estate is organic (certified) and we work with biodynamic management, respecting the conditions of the origin of each wine, with minimal intervention. Biodynamics interests us a lot. It is very important to help the plant understand when the active cycle ends, so that it saves all possible reserves for the arrival of cold and frost, that is why leaf removal is done ".
